Ebrius 2021 IGT Sangiovese

The 2021 Ebrius is a Toscana IGT Rosso Biologico produced by the Valle del Sole Farm, obtained from Sangiovese grapes grown in Cappella, in the municipality of Lucca. The vines, trained in Guyot with a density of 5000 plants per hectare, are harvested manually with a careful selection of the bunches. Fermentation takes place with indigenous yeasts in concrete vats and tanks at a controlled temperature of 23-27°C, with manual punching down and pumping over. The wine ages for 6 months in concrete barrels, followed by 12 months in 1000 to 2000-liter French oak barrels, and further refines for one year in the bottle. Annual production varies between 3,000 and 5,000 750 ml bottles.
